I suggest that since you'll be taking away the vertical front face of the coachroof, you'll need to add back in, between the old hatch position and the new hatch, an arch made of thick plywood, or a laminated deck beam with a tight curvature, or hanging knees, or something of the sort. Other than that, I see no reason why your plan won't work.

Heaps of production boats, with wedge-shaped coachroofs, have the hatch as you suggest, Scott.  Stroll around a marina or the Internet and have a look at them.  A strong and strongly mounted hatch has plenty of strength.  I'd suggest mounting the hatch on a wooden plinth, so that you can get the top absolutely flat (cover your hatch base with cling film or packaging tape, mix up a thick epoxy putty and spread it on the plinth.  Gently place the hatch as it will be fitted and let the epoxy go hard.  You will then have a tailor-made base.) The plinth has the added advantage of deflecting water, should you be sluicing down the deck and have forgotten to close, or dog the hatch.

IMHO, the biggest issue will be making the new extension and fairing it in seamlessly to the existing structure.

The links above are to a crude drawing and a cruder photoshop of a hatch idea.

Since I'm losing the molded-in hatch where the coach roof ends over the v-berth, I'm concerned about ventilation, light, and most importantly, egress up there.

I've thought about putting a new hatch on the deck forward of the coach roof, and that would certainly be the easiest route.  But I'd like to get all of your opinions on adding the hatch on a kind of extended coach roof, sloping down from the existing roof to the deck surface.  That would keep the hatch a bit further aft, make it easier to get to keep it a bit higher.

Down side is that it is now angled forward, just waiting for green water coming over the bow, plus there's a structural issue I think somewhere in there.

Anybody have experience with this kind of renovation to get a mast in the v-berth?
