How does one sail a schooner to windward? (Touches on motor-sailing too.)

    We moved the boat about 8 Nm down the coast today, but the favourable S Easterly died, replaced by an on the nose 20 knot Sou' wester. Ashiki, heeled, pumped her foremast and though could tack through 90˚, was not a speedster. 2.5 to 3.5kts was the order of the day (sometimes shocked when she hit 4kts, must have been a patch of smooth sea...). 
    We were slightly handicapped by having no winches onboard - so couldnt raise all 7 panels. We noticed she went slighter better after reefing the main, less drag I presume, so 4 panel main and 6 panel foresail. You can see a pic of the set of her sails, I thought they looked pretty good. So am i doing something wrong? Or would this be expected of a schooner with the additional drag from multiple masts?

    Also, the windvane isn't installed yet, so hand steered all the way, which probably made the trip feel more arduous then it should have.

    Plus..  we sailed with the outboard down in the well. No idea if the lower leg & prop would make any noticeable difference.
